Moroccan Spiced Beef Tagine with Roasted Vegetable Couscous

A family-friendly Moroccan-inspired beef tagine with tender meat and warm spices, served over a bed of roasted vegetable couscous. A flavorful and wholesome global-inspired dinner.
Ingredients
- 2 lbs beef chuck roast, cubed
- 1 onion, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup low-sodium beef broth
- 1 15oz can chickpeas, drained and rinsed
- 1/2 cup dried apricots, chopped
- 1 cup couscous
- 3 carrots, peeled and diced
- 1 zucchini, diced
- 2 tbsp olive oil

In a large pot or Dutch oven, brown the beef cubes over medium-high heat until seared on all sides, about 5 minutes. Remove beef to a plate.

In the same pot, sauté the onion and garlic until softened, about 3-4 minutes.
