Moroccan-Spiced Beef Tagine with Roasted Vegetable Couscous

A flavorful Moroccan-inspired beef tagine simmered with warm spices, served over a bed of fluffy couscous with roasted vegetables for a family-friendly global dinner.
Ingredients
- 1.5 lbs beef stew meat
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 can crushed tomatoes, (14.5 oz)
- 2 cups beef broth
- 1.5 cups couscous
- 3 medium carrots, peeled and diced
- 2 medium zucchini, diced
- 3 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 0.25 cup fresh parsley, chopped

In a large pot or Dutch oven, brown the beef stew meat over medium-high heat until seared on all sides, about 5 minutes. Remove beef and set aside.

Reduce heat to medium, add 1 tbsp olive oil to the pot, and sauté the onion until translucent, about 3-4 minutes. Add the garlic and cook for 1 minute until fragrant.
