Moroccan Spiced Chicken and Lentil Tagine

A fragrant and comforting Moroccan-inspired tagine featuring tender chicken, hearty lentils, and a medley of vegetables. Perfectly balanced for GLP-1 medication support.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 medium onion, diced
- 3 cloves garlic cloves, minced
- 2 tbsp Moroccan spice blend, contains cumin, coriander, cinnamon, paprika
- 1 14.5 oz can diced tomatoes, with juice
- 1 cup low-sodium chicken broth
- 1 cup green lentils, rinsed
- 2 cups cauliflower florets
- 2 cups baby spinach
- 2 tbsp lemon juice
- 1/4 cup fresh parsley, chopped

In a large pot or Dutch oven, sauté the chicken over medium-high heat until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

Add the onion to the pot and cook for 3-4 minutes until softened. Add the garlic and Moroccan spice blend, and cook for 1 minute until fragrant.
