Moroccan Spiced Chicken Skewers with Couscous Tabbouleh

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper

In a large bowl, combine the chicken, 3 tbsp olive oil, 2 tbsp lemon juice, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
