Moroccan-Spiced Chicken Tagine with Apricot Couscous

Ingredients

- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 0.5 tsp ground cinnamon
- 1 14.5 oz can diced tomatoes
- 1 cup chicken broth
- 0.5 cup dried apricots, chopped
- 1 cup couscous
- 2 tbsp olive oil
- 4 lemon wedges, for serving

In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
