Moroccan-Spiced Chicken Tagine with Garlic Couscous

A fragrant and flavorful Moroccan-inspired chicken tagine, served over a bed of fluffy garlic-infused couscous. This easy one-pot meal is perfect for a family dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 onion, diced
- 4 garlic cloves, minced
- 2 tbsp Moroccan spice blend, containing cumin, coriander, cinnamon, paprika
- 1 15oz can diced tomatoes
- 1 cup vegetable broth
- 1 15oz can chickpeas, rinsed and drained
- 1/2 cup dried apricots, chopped
- 1 cup couscous
- 1 tsp garlic powder
- 2 tbsp olive oil
- 1 lemon, juiced

In a large pot or dutch oven, heat the olive oil over medium heat. Add the chicken, onion, and garlic. Cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned.
