Zesty Moroccan-Style Chicken Skewers with Charred Vegetable Couscous

- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper, or to taste
- 2 tbsp lemon juice
- 1 tsp salt
- 2 bell peppers, assorted colors, cut into 1-inch pieces
- 1 medium zucchini, cut into 1-inch pieces
- 1 small red onion, cut into 1-inch pieces
- 1 cup couscous
- 1 cup vegetable broth
- 1 tbsp lemon zest
- 1/4 cup chopped parsley

In a large bowl, combine the cubed chicken, 2 tbsp olive oil, paprika, cumin, coriander, garlic powder, cayenne (if using), lemon juice, and 1 tsp salt. Toss to coat the chicken evenly. Cover and marinate in the refrigerator for 30 minutes to 1 hour.

Preheat grill or grill pan to medium-high heat. Thread the marinated chicken and chopped vegetables onto skewers.
