Moroccan Spiced Lamb Meatballs with Herb Couscous

- 1/2 cup breadcrumbs
- 1 egg
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 onion, diced
- 1 14oz can canned crushed tomatoes
- 1/2 cup chicken or vegetable broth
- 1 cup couscous
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped

In a large bowl, combine the ground lamb, breadcrumbs, egg, 2 cloves minced garlic, cumin, coriander, and 1/4 tsp salt. Mix until just combined, then form into 1-inch meatballs.

In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, about 5 minutes. Transfer meatballs to a plate.
