Moroccan Spiced Lamb Skewers with Roasted Veggie Couscous

Juicy, flavorful lamb skewers marinated in Moroccan spices, served over a bed of roasted vegetable-studded couscous for a family-friendly global dinner.
Ingredients
- 1.5 lbs lamb loin, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- 3 garlic cloves, minced
- 2 tbsp lemon juice
- 1 cup couscous
- 2 cups carrots, diced
- 2 cups zucchini, diced
- 1 cup red onion, diced
- 1.5 cups vegetable broth
- 1/4 cup fresh parsley, chopped
- salt and pepper, to taste

In a large bowl, combine the lamb cubes, 2 tbsp olive oil, cumin, coriander, paprika, cinnamon, garlic, and lemon juice. Toss to coat the lamb. Cover and marinate in the refrigerator for at least 30 minutes, up to 24 hours.

Preheat oven to 400°F. On a large baking sheet, toss the carrots, zucchini, and red onion with the remaining 1 tbsp olive oil. Season with salt and pepper. Roast for 20-25 minutes, stirring halfway, until vegetables are tender and lightly browned.
