Moroccan Spiced Lamb Tagine with Couscous Salad

A family-friendly Moroccan-inspired tagine featuring tender lamb, warm spices, and a vibrant couscous salad on the side.
Ingredients
- 1.5 lbs lamb shoulder, cubed
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tbsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 2 cups chicken broth
- 1 14oz can diced tomatoes
- 1/2 cup dried apricots, chopped
- 1 cup couscous
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup parsley, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- salt and pepper, to taste

In a large pot or Dutch oven, brown the lamb over medium-high heat until seared on all sides, about 5 minutes. Remove lamb and set aside.

Reduce heat to medium, add the onion and sauté for 3-4 minutes until softened. Add the garlic and spices and cook for 1 minute until fragrant.
