Moroccan-Spiced Seared Chicken with Cauliflower Tabbouleh

Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 4 cups cauliflower florets, finely chopped
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil

In a medium bowl, combine the cumin, coriander, paprika, garlic powder, salt, and pepper. Add the chicken cubes and toss to coat evenly.
