Peruvian-Spiced Grass-Fed Beef Anticuchos with Purple Potato & Charred Poblano Medley

Succulent grilled beef heart skewers marinated in cumin, smoked paprika, and lime with a hint of ají amarillo heat, served alongside crispy purple potatoes and blistered poblano peppers for an authentic Andean feast that's both bold and beautifully balanced.
Ingredients
- 1.5 lbs grass-fed beef sirloin or chuck, cut into 1-inch cubes
- 1.5 tbsp cumin seeds, toasted and ground
- 1 tbsp smoked paprika
- 3 tbsp lime juice, fresh squeezed
- 4 cloves garlic, minced
- 4 tbsp extra virgin olive oil, divided
- 1 tbsp ají amarillo paste, or substitute with 1/2 tsp cayenne
- 1 medium red onion, cut into chunks for skewers
- 1 lb purple potatoes, halved
- 2 large poblano peppers, halved, seeds removed
- 1 tsp sea salt
- 0.5 tsp black pepper
- 0.25 cup cilantro, fresh, chopped for garnish

Toast cumin seeds in a dry skillet over medium heat for 2 minutes until fragrant, then grind in a mortar and pestle.

Combine ground cumin, smoked paprika, lime juice, minced garlic, 3 tbsp olive oil, ají amarillo paste, salt, and pepper in a bowl to create marinade.
