Ingredients
- 4 6 oz boneless, skinless chicken breasts, trimmed of any visible fat
- 3 large sweet potatoes, scrubbed clean and cut into 1/2-inch wedges
- 4 cups broccoli florets, fresh or frozen
- 2 tbsp olive oil, divided
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 2 tbsp lime juice, fresh squeezed
- 1 tsp salt
- 1/2 tsp black pepper

Preheat oven to 400°F. Toss the sweet potato wedges with 1 tbsp of olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
