Ingredients

- 2 tsp lime zest
- 2 tbsp lime juice
- 1 tsp chili powder
- 1 tsp garlic powder
- 2 tbsp olive oil
- 3 medium sweet potatoes, cubed
- 1 medium red bell pepper, diced
- 1 medium zucchini, diced
- 1 small yellow onion, diced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper

Preheat oven to 400°F. Toss the cubed sweet potatoes, bell pepper, zucchini, and onion with 1 tbsp olive oil, salt, and pepper on a large baking sheet. Roast for 25-30 minutes, stirring halfway, until vegetables are tender and lightly browned.
