Sizzling Garlic Ginger Shrimp Stir-Fry with Roasted Cauliflower and Barley

Ingredients
- 1 lb peeled and deveined shrimp, 93% lean
- 3 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cups broccoli florets
- 3 cups cauliflower florets
- 1 cup barley, dry, cooked according to package
- 1/2 cup green onions, sliced
- 2 tbsp sesame seeds

Preheat oven to 400°F. Toss the cauliflower florets with 1 tbsp of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.

In a large skillet or wok, heat 1 tbsp of olive oil over medium-high heat. Add the shrimp, garlic, and ginger. Sauté for 2-3 minutes, until the shrimp starts to turn pink.
