Seared Chili-Lime Shrimp with Roasted Vegetable Medley

A vibrant, protein-packed Mexican-inspired dinner that's easy to digest and perfect for GLP-1 medication support. Seared shrimp in a zesty chili-lime sauce over a bed of roasted bell peppers, zucchini, and onions.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 2 tbsp lime juice
- 3 cloves garlic, minced
- 2 medium bell peppers, sliced
- 2 medium zucchini, sliced
- 1 small red onion, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup cilantro, chopped

Preheat oven to 400°F. Toss the sliced bell peppers, zucchini, and onion with 1 tbsp of olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, stirring halfway, until vegetables are tender and lightly charred.

In a medium bowl, combine the shrimp, remaining 1 tbsp of olive oil, chili powder, lime juice, and minced garlic. Toss to coat the shrimp evenly.
