Ingredients
- 4 6 oz tilapia fillets, or other white fish like cod
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp chili powder
- 1 tsp garlic powder
- salt and black pepper, to taste
- 4 cups cauliflower florets, finely chopped or riced
- 2 bell peppers, diced
- 2 cups snap peas, sliced diagonally
- 2 tbsp low-sodium soy sauce
- 4 lime wedges, for serving

Pat the tilapia fillets dry and season both sides with the chili powder, garlic powder, salt, and black pepper.

Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the seasoned tilapia fillets and cook for 3-4 minutes per side until golden brown and cooked through. Transfer to a plate and cover to keep warm.
