Ingredients
- 4 6 oz tilapia fillets, or other white fish like cod or halibut
- 2 tsp chili powder
- 1 tbsp lime zest
- 1 cup quinoa
- 2 cups broccoli florets
- 1 medium bell peppers, diced
- 1 medium zucchini, diced
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1/4 cup cilantro, chopped
- to taste salt and pepper

Preheat oven to 400°F. Toss the broccoli, bell peppers, and zucchini with 1 tbsp olive oil and season with salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, until vegetables are tender.

While the vegetables are roasting, cook the quinoa according to package instructions. Fluff with a fork and let cool slightly.
