Seared Garlic Ginger Pork Medallions with Cauliflower Fried Rice

Ingredients
- 1.5 lbs pork tenderloin, cut into 1-inch medallions
- 4 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp Dijon mustard
- 1 tsp sesame oil
- 4 cups cauliflower, riced
- 1 green bell pepper, diced
- 1 cup frozen peas
- 4 green onions, sliced
- 2 egg, lightly beaten
