Seared Garlic-Herb Pork Chops with Roasted Sweet Potato Medley

Ingredients
- 4 boneless pork chops, 4 oz each
- 2 medium sweet potatoes, diced
- 2 medium bell peppers, diced
- 2 medium zucchini, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Dice the sweet potatoes, bell peppers, and zucchini and place them on a large baking sheet. Drizzle with 1 tbsp of olive oil and season with 1/2 tsp of garlic powder, 1/2 tsp of dried oregano, 1/2 tsp of dried thyme, 1/4 tsp of salt, and 1/8 tsp of black pepper. Toss to coat evenly.
