Ingredients
- 4 6-oz tilapia fillets, wild-caught preferred
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- 2 tbsp olive oil
- 4 cups butternut squash, peeled and cubed
- 1 cup quinoa, uncooked
- 2 cups chicken broth
- 4 lemon wedges

Preheat oven to 400°F. Toss the butternut squash cubes with 1 tbsp of olive oil and season with salt and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and lightly browned.
