Seared Garlic-Herb Tilapia with Roasted Sweet Potato and Sautéed Greens

A delightful GLP-1 friendly dinner featuring perfectly seared tilapia fillets seasoned with a vibrant garlic-herb blend, served over a bed of roasted sweet potato cubes and sautéed leafy greens.
Ingredients
- 1.5 lbs tilapia fillets
- 2 medium sweet potato, peeled and cubed
- 4 cups fresh spinach, packed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Toss the cubed sweet potato with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.

In a small bowl, combine the minced garlic, chopped thyme, chopped rosemary, paprika, salt, and pepper. Rub this seasoning mixture over both sides of the tilapia fillets.
