Seared Ginger-Garlic Chicken with Roasted Sweet Potato and Broccoli

Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 2 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 3 cups sweet potatoes, cubed
- 4 cups broccoli florets
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper

In a shallow dish, combine the grated ginger, minced garlic, soy sauce, rice vinegar, and sesame oil. Add the chicken breasts and turn to coat both sides. Cover and marinate in the refrigerator for 15-30 minutes.

Preheat the oven to 400°F. Toss the cubed sweet potatoes and broccoli florets with the olive oil, salt, and pepper on a large baking sheet. Roast for 20-25 minutes, stirring halfway, until tender and lightly browned.
