Ingredients
- 4 halibut fillets, 4-6 oz each
- 1 pound brussels sprouts, trimmed and halved
- 1.5 cups farro, dry, uncooked
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt, divided
- 0.5 teaspoon black pepper, divided
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey

Preheat oven to 400°F. In a small bowl, combine the garlic, ginger, 1/2 tsp salt, and 1/4 tsp pepper. Rub the mixture all over the halibut fillets.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear the halibut for 3-4 minutes per side, until lightly browned. Transfer to a plate.
