Seared Ginger Garlic Pork Tenderloin with Roasted Broccoli and Farro

Ingredients
- 1.5 lbs pork tenderloin
- 2 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 4 cups broccoli florets
- 1 cup farro, dry
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
