Seared Ginger-Garlic Shrimp with Cauliflower Rice Stir-Fry

Ingredients
- 1 lb large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 4 cups cauliflower, riced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 4 green onions, sliced
- 1/4 cup low-sodium chicken broth

In a small bowl, combine the shrimp, garlic, ginger, soy sauce, rice vinegar, and sesame oil. Toss to coat the shrimp and let marinate for 10-15 minutes.

Heat a large non-stick skillet or wok over medium-high heat. Add the shrimp mixture and cook for 2-3 minutes per side, until the shrimp are opaque and cooked through. Remove the shrimp from the pan and set aside.
