Seared Ginger Sesame Tuna with Miso-Roasted Vegetables

Tender seared tuna steak coated in a ginger-sesame glaze, served over a colorful medley of miso-roasted broccoli, cauliflower, and zucchini. A satisfying and nutrient-dense GLP-1 friendly dinner.
Ingredients
- 4 4 oz tuna steaks, sushi-grade
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 medium zucchini, sliced into half-moons
- 2 tbsp miso paste, white or yellow
- 2 tsp sesame oil
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 2 tbsp sesame seeds

Preheat oven to 400°F. In a large bowl, combine the broccoli, cauliflower, and zucchini. Whisk together the miso paste, 1 tsp sesame oil, 1 tbsp soy sauce, and rice vinegar. Pour the miso mixture over the vegetables and toss to coat.

Spread the vegetables in a single layer on a baking sheet. Roast for 20-25 minutes, stirring halfway, until tender and lightly browned.
