- 4 boneless, skinless chicken breasts
- 1/4 cup lime juice
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 6 cups mixed greens
- 1 cup quinoa, cooked
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 medium red bell pepper, diced
- 1 medium avocado, diced

In a shallow dish, whisk together the lime juice, honey, garlic, cumin, salt, and pepper. Add the chicken breasts and turn to coat both sides. Cover and marinate for 15-30 minutes.

Heat a large non-stick skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes per side, or until cooked through. Transfer chicken to a cutting board and let rest for 5 minutes before slicing.
