Seared Salmon Niçoise Salad

A fresh and flavorful Niçoise-style salad featuring seared salmon, roasted potatoes, and a tangy lemon vinaigrette for a filling and nutrient-dense GLP-1 friendly meal.
Ingredients
- 4 salmon fillets, 4 oz each
- 1 pound new potatoes, halved
- 8 ounces green beans, trimmed
- 1 pint cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved
- 4 hard boiled eggs, quartered
- 8 cups mixed greens, washed and torn
- 2 tablespoons olive oil, for searing salmon
- 3 tablespoons lemon juice, for vinaigrette
- 1 teaspoon dijon mustard, for vinaigrette
- 1 small shallot, minced, for vinaigrette
- salt and pepper, to taste

Preheat oven to 400°F. Toss the halved new potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender.

Meanwhile, bring a pot of salted water to a boil. Blanch the green beans for 2-3 minutes until bright green and crisp-tender. Drain and set aside.
