Seared Salmon with Roasted Butternut Squash and Quinoa

Ingredients
- 4 6 oz salmon fillets, wild-caught preferred
- 1 medium butternut squash, peeled and cubed
- 1 cup quinoa, dry, rinsed
- 2 tbsp olive oil, for roasting and searing
- 2 tbsp lemon juice, freshly squeezed
- 3 cloves garlic, minced
- 1 tsp paprika, smoked or regular
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups broccoli, florets

Preheat oven to 400°F. Toss the cubed butternut squash with 1 tbsp of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and lightly browned.
