Ingredients

- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 3 cups sweet potatoes, peeled and cubed
- 2 bell peppers, sliced
- 1 cup red onion, sliced
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 4 lemon wedges, for serving

Preheat oven to 400°F. Toss the sweet potato cubes, bell peppers, and onion with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway, until vegetables are tender and lightly browned.

In a bowl, toss the shrimp with the Cajun seasoning and remaining 1 tbsp olive oil. Thread the shrimp onto metal or wooden skewers.
