Ingredients
- 1.5 lbs beef sirloin, thinly sliced
- 1 lb bok choy, chopped into 1-inch pieces
- 2 cups carrots, julienned
- 2 cups snap peas, halved diagonally
- 4 cloves garlic, minced
- 2 tbsp ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tbsp honey
- 1 tbsp cornstarch
- 1/2 tsp crushed red pepper flakes, plus more to taste
- 2 tbsp vegetable oil
- 4 green onions, sliced

In a medium bowl, combine the beef, 2 tablespoons of the soy sauce, 1 tablespoon of the rice vinegar, and 1/2 teaspoon of the crushed red pepper flakes. Toss to coat and let marinate for 15 minutes.

In a small bowl, whisk together the remaining 2 tablespoons soy sauce, 1 tablespoon rice vinegar, honey, sesame oil, and cornstarch. Set aside.
