- 2 tbsp red curry paste
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1/4 cup chopped cilantro
- 2 medium sweet potatoes, cubed

- 4 cups baby spinach
- 1/2 small red onion, sliced
- 1/4 cup feta cheese, crumbled
