Spicy Moroccan Chicken Skewers with Citrus Couscous

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp harissa paste
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- 1.5 cups couscous
- 1.5 cups vegetable broth
- 1 tbsp orange zest
- 1 tbsp lemon zest
- 1/4 cup parsley, chopped
- 1/4 cup mint, chopped

In a large bowl, combine the chicken, olive oil, harissa paste, lemon juice, garlic, cumin, coriander, and salt. Toss to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes, up to 4 hours.
