Spicy Sichuan Beef Noodle Bowls

Ingredients
- 1 lb beef sirloin, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tbsp ginger, minced
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes, adjust to spice level
- 2 tbsp vegetable oil
- 1 cup snow peas, sliced
- 1 cup carrots, julienned
- 2 cups baby bok choy, chopped
- 8 oz udon noodles
- 3 green onions, sliced

In a medium bowl, combine the beef, soy sauce, brown sugar, rice vinegar, and sesame oil. Toss to coat and let marinate for 15 minutes.

Heat the vegetable oil in a large skillet or wok over high heat. Add the beef and marinade and cook, stirring frequently, until the beef is browned and cooked through, about 5-7 minutes.
