Spicy Szechuan Beef Noodle Bowls

Tender beef in a bold Szechuan-style sauce served over hearty udon noodles and fresh veggies for a family-friendly Asian fusion dinner.
Ingredients
- 1.5 lbs flank steak, thinly sliced against the grain
- 12 oz udon noodles
- 2 cups broccoli florets
- 1 cup carrots, julienned
- 4 scallions, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp chili garlic sauce
- 1 tbsp cornstarch
- 2 tsp brown sugar
- salt and pepper, to taste

In a large bowl, combine the sliced flank steak, soy sauce, rice vinegar, sesame oil, chili garlic sauce, cornstarch, and brown sugar. Toss to coat the beef.

Heat a large skillet or wok over high heat. Add the beef mixture and cook for 5-7 minutes, stirring frequently, until the beef is cooked through and the sauce has thickened.
