Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 4 cups broccoli florets, bite-sized pieces
- 2 cups brown rice, cooked
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 green onions, sliced

In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil. Set aside.

Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until no longer pink, about 6-8 minutes. Remove chicken from the skillet and set aside.
