Teriyaki Pineapple Pork Bowls

Sweet and savory teriyaki pork over a bed of fluffy quinoa, fresh pineapple, and crisp veggies - a fun tropical twist on a family-friendly bowl meal!
Ingredients
- 1.5 lbs boneless pork chops, cut into 1-inch cubes
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 tsp ginger, grated
- 2 cloves garlic, minced
- 1/4 tsp crushed red pepper flakes
- 1 cup pineapple chunks
- 1 bell pepper, sliced
- 1 cup shredded carrots
- 1 cup quinoa, cooked according to package
- 2 green onions, sliced
- 2 tbsp sesame seeds

In a medium bowl, combine the soy sauce, brown sugar, ginger, garlic, and red pepper flakes. Add the pork cubes and toss to coat. Cover and refrigerate for 30 minutes to 1 hour.
