Teriyaki Pork Tenderloin with Pineapple Salsa

Ingredients
- 1.5 lbs pork tenderloin
- 1/3 cup soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 cup pineapple, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 2 tbsp cilantro, chopped
- 2 tbsp lime juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 cups rice, cooked

In a shallow baking dish, whisk together the soy sauce, brown sugar, garlic, and ginger. Add the pork tenderloin and turn to coat. Cover and marinate in the refrigerator for at least 30 minutes, up to 24 hours.

Preheat oven to 400°F. Transfer the pork and marinade to a baking sheet. Roast for 20-25 minutes, until the pork reaches an internal temperature of 145°F.
