Teriyaki Pork Tenderloin with Pineapple Fried Quinoa

Ingredients
- 1.5 lbs pork tenderloin
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 cup quinoa
- 1 cup pineapple, diced
- 1 bell pepper, diced
- 3 green onions, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil

In a small bowl, whisk together the soy sauce, honey, garlic, and ginger. Add the pork tenderloin and turn to coat. Cover and refrigerate for 30 minutes to 1 hour.

Preheat oven to 400°F. Transfer the pork and marinade to a baking dish. Roast for 25-30 minutes, until the pork reaches an internal temperature of 145°F.
