Teriyaki Salmon Lettuce Wraps with Edamame Fried Rice

Bright, fresh Japanese-inspired wraps with tender teriyaki salmon, crunchy veggies, and savory fried rice.
Ingredients
- 1.5 lbs salmon fillets, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 12 romaine lettuce leaves
- 1 cup carrots, julienned
- 1 cup cucumber, julienned
- 2 cups edamame, shelled
- 2 cups brown rice, cooked
- 1/2 cup green onions, sliced
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tbsp sesame seeds

In a medium bowl, combine the salmon, soy sauce, brown sugar, rice vinegar, garlic, and ginger. Cover and marinate for 30 minutes.

Heat a large skillet over medium-high heat. Add the marinated salmon and cook for 4-5 minutes per side, until cooked through. Remove from heat and set aside.
