Teriyaki Salmon Stir-Fry with Edamame Fried Rice

A fast and flavorful family-friendly dinner with tender teriyaki salmon, fresh stir-fried veggies, and a fun edamame fried rice.
Ingredients
- 1.5 lbs salmon fillets, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 2 carrots, julienned
- 1 cup edamame, shelled
- 3 cups cooked brown rice
- 3 green onions, sliced
- 2 tsp sesame oil
- 2 tbsp sesame seeds

In a small bowl, whisk together the soy sauce, honey, garlic, and ginger. Add the salmon cubes and toss to coat. Let marinate for 15 minutes.

Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat. Add the broccoli, bell pepper, and carrots. Stir-fry for 5-7 minutes until tender-crisp.
