Thai-Style Coconut Curry Chicken

A family-friendly take on classic Thai coconut curry, with tender chicken simmered in a fragrant, mild curry sauce. Serve over fluffy jasmine rice for a wholesome, globally-inspired dinner the whole family will love.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 can coconut milk, (13.5 oz)
- 2 tbsp Thai red curry paste
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 2 tbsp fresh lime juice
- 2 cups baby spinach, roughly chopped
- 2 cups jasmine rice, cooked according to package directions
- 1/4 cup chopped cilantro, for garnish
- 2 tbsp sliced green onions, for garnish

In a large skillet or Dutch oven, combine the coconut milk, curry paste, fish sauce, and brown sugar. Whisk to combine and bring to a simmer over medium heat.
