Vibrant Cuban Mojo Pork Bowls

Tender, flavorful mojo-marinated pork, served over a colorful bed of cilantro-lime rice, black beans, and fresh tropical salsa. A fun, family-friendly Cuban-inspired dinner!
Ingredients
- 1.5 lbs pork tenderloin
- 1/2 cup orange juice
- 3 tbsp lime juice
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup basmati rice
- 2 cups chicken broth
- 1 tbsp lime zest
- 1/4 cup cilantro, chopped
- 1 15oz can black beans, rinsed and drained
- 1 mango, diced
- 1/2 cup red onion, diced
- 1 jalapeño, seeded and minced

In a shallow baking dish, combine the orange juice, lime juice, olive oil, garlic, cumin, oregano, salt, and pepper. Add the pork tenderloin and turn to coat. Cover and marinate for 30 minutes to 1 hour.

Preheat oven to 400°F. Transfer the pork and marinade to a baking sheet. Roast for 25-30 minutes, until the pork reaches an internal temperature of 145°F.
