Vibrant Vietnamese Beef Pho Bowls

Tender beef simmered in a fragrant, spice-infused broth with fresh rice noodles and a rainbow of crisp veggies. A family-friendly take on classic Vietnamese pho.
Ingredients
- 1.5 lbs beef chuck roast, cut into 1-inch cubes
- 6 cups low-sodium beef broth
- 2 whole star anise
- 1 cinnamon stick
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 8 oz rice noodles
- 2 cups bean sprouts
- 1 cup fresh basil leaves
- 1 cup fresh cilantro
- 4 lime wedges

In a large pot, combine the beef, beef broth, star anise, cinnamon stick, fish sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until beef is very tender.

Remove and discard the star anise and cinnamon stick. Use a slotted spoon to transfer the beef to a bowl.
