Zesty Brazilian Steak Salad Bowls

A vibrant and flavorful twist on the classic steak salad, featuring marinated grilled picanha steak, roasted sweet potatoes, and a zesty Brazilian-inspired chimichurri dressing.
Ingredients
- 1.5 lbs picanha steak
- 3 cups sweet potatoes, cubed
- 6 cups mixed greens
- 1 15oz can black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 2 tbsp lime juice
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 2 tbsp red wine vinegar
- 1 tsp cumin
- 1/2 tsp chili powder

Preheat oven to 400°F. Toss the cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes, until tender and lightly browned.

In a small bowl, whisk together the lime juice, 3 tbsp olive oil, garlic, cilantro, red wine vinegar, cumin, chili powder, and a pinch of salt and pepper to make the chimichurri dressing.
