Zesty Cuban Shredded Pork Bowls

Tender, flavor-packed shredded pork with vibrant tropical slaw and lime-cilantro rice - a family-friendly taste of Cuba!
Ingredients
- 2 lbs boneless pork shoulder, trimmed of excess fat
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 1 cup orange juice
- 1/4 cup lime juice
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups brown rice, cooked
- 1 lime, zested and juiced
- 1/4 cup cilantro, chopped
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup pineapple, diced
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1/2 tsp salt

In a slow cooker, combine the pork, onion, garlic, orange juice, lime juice, cumin, oregano, salt, and pepper. Cook on low for 6-8 hours until the pork is very tender.

Remove the pork from the slow cooker and shred it using two forks. Skim any excess fat from the cooking liquid and add the shredded pork back into the liquid.
