Zesty Lemon Chicken Piccata with Roasted Broccoli

Tender chicken breasts in a bright lemon-caper sauce, served with roasted broccoli florets for a healthy, flavor-packed family dinner.
Ingredients
- 1.5 lbs chicken breasts, boneless, skinless
- 1/4 cup lemon juice, freshly squeezed
- 1/2 cup chicken broth, low-sodium
- 2 tbsp capers, drained and rinsed
- 2 tbsp butter, unsalted
- 2 tbsp all-purpose flour
- 4 cups broccoli florets
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Toss the broccoli florets with 1 tbsp olive oil, 1 minced garlic clove, and a pinch of salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.

Meanwhile, season the chicken breasts on both sides with salt and pepper. In a large skillet over medium-high heat, warm the remaining 1 tbsp olive oil. Add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through. Transfer to a plate and cover to keep warm.
