Zesty Lemon-Garlic Shrimp Scampi with Roasted Broccoli and Farro

Delicate shrimp sautéed in a bright lemon-garlic sauce, served over a bed of hearty farro and roasted broccoli florets for a satisfying and GLP-1 friendly dinner.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 cup farro, dry
- 4 cups broccoli florets, fresh
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 2 cups low-sodium chicken broth
- 2 tbsp parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Toss the broccoli florets with 1 tablespoon of olive oil and spread on a baking sheet. Roast for 18-20 minutes, until tender and lightly charred.

While the broccoli is roasting, bring the chicken broth to a boil in a medium saucepan. Add the farro, cover, and reduce heat to low. Simmer for 20-25 minutes, until farro is tender. Drain any excess liquid and fluff with a fork.
