Zesty Moroccan Beef Bowls with Jeweled Couscous

Spiced Moroccan-style ground beef and tender vegetables served over a vibrant couscous pilaf with dried fruits, nuts, and fresh herbs. A flavor-packed, family-friendly dinner.
Ingredients
- 1 lb lean ground beef
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tbsp Moroccan spice blend
- 2 tbsp tomato paste
- 1 cup vegetable broth
- 1 15oz can chickpeas, drained and rinsed
- 1 cup frozen peas
- 1 cup couscous
- 1.25 cups water
- 1/2 cup dried apricots, chopped
- 1/4 cup roasted almonds, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice

In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until beef is browned and onions are softened, 5-7 minutes. Drain excess fat.

Stir in the Moroccan spice blend and tomato paste. Pour in the broth and add the chickpeas and peas. Simmer for 10 minutes, until slightly thickened.
